Since last year working from home has become a standard setting and it looks like it is here to stay. Which inevitably means juggling work and home and whipping up meals whenever the time permits. Busy parents are always on the lookout for quick solutions to their daily meal planning and to cater to that we have put together a list of easy meals which can be cooked in under an hour.

1. Loaded Naan Pizza

For this quick meal, you will need store-bought low-carb naan, which can be frozen. Brush the surface with olive oil, crushed garlic, and basil seasoning. Sprinkle the top with shredded mozzarella, capsicum, red onions, spinach, and protein (paneer/chicken/meat) of your choice. Pan toss the protein in seasonings of your choice and shred it after it’s cooked.

Place the loaded naan in the oven and bake until the cheese has melted, and the edges are golden. Drizzle the naan pizza with olive oil and salt with a dash of balsamic vinegar.

2. Chicken Alfredo

For this recipe, you will need parmesan cheese, butter, milk, pasta, and chicken breast. Pat the chicken breast dry and season it with salt, oregano, basil, and pepper. Wrap the chicken in foil and bake in the oven. In the meantime, boil pasta in water until it is cooked al dente. Take a large saucepan and slowly stir the parmesan cheese, milk, and butter until the cheese has dissolved. Lower the heat and add the cooked pasta. Coat the pasta in the sauce. Chop up the cooked chicken breast and either add it to the pasta or serve as a side.

3. DIY Paneer Wraps

For this easy Indian recipe, you will need rotis (frozen or fresh), paneer, tomatoes, avocado, onion, and spinach. Cube the paneer into bite-size pieces, place it in hot water for 15 minutes, and pat dry. Season the paneer with olive oil, salt, pav bhaji powder, coriander powder, cumin powder, and red chilli powder. Pan-fry the paneer for less than 10 minutes. Let it cool. In the meantime, chop up tomatoes, onions, and avocado.

Peanut Spread: Make a large batch of peanut curry leaf spread and store it. For the spread, you will need peanuts, channa dal, and curry leaves. Roast and blend with water. Season with salt, red chilli, and tadka made of dried red chilli, mustard seeds, and channa dal.
