A nutritious soup made healthy with protein-rich white beans and vegetables. Easy to make, serve this delicious soup over dinner with toasted pieces of bread on the side, and enjoy the bounty of winter.

Switch on the Prestige Delight Smart Electric Rice Cooker, add the overnight soaked and washed beans, salt, and water to boil for 45 minutes.

You can cook the beans manually, by stirring in-between till the beans are cooked through.

Or, set a timer through Prestige smart app, and operate the cooker from the app at your convenience.

Remove the boiled beans along with the stock from the cooker pan, and keep aside.

Heat butter in the cooker, temper with crushed black peppercorns.

Add the chopped garlic, and sauté for a few seconds.

Add the onions, and sauté until translucent.

Add the vegetables and dried herbs of your choice, and sauté for a few seconds.

Add pureed tomatoes along with a few spoonfuls of beans stock, mix well.

Next, add the cooked beans, mix and cover the cooker to cook the soup for 15 minutes, or until the vegetables are done.
