Bhuna is a cooking process where spices are cooked in oil to bring out their flavour. Chicken bhuna is a simple recipe of diced chicken marinated with sauce and yoghurt, a classic chicken recipe.
In a bowl add turmeric, black pepper powder, chili powder, Salt, ginger-garlic paste, garam masala, mustard oil, cumin powder, coriander powder. Squeeze in lemon juice and mix well.
Add in the Chicken to the mixture and let it marinate for 2 hours or 15 mins.
In the meantime, heat the pan and add mustard oil, bay leaf, cinnamon, star anise and few black pepper corns. Add the chicken mixture and cook for 3-5 minutes.
Add in the sliced onions and stir well.
Finally, add the yogurt, fresh coriander and mix well. Allow it to cook for 3-5 minutes. Garnish with fresh coriander and serve.
