A great dish for health freaks, Pesto is all about crushed garlic, basil and European pine nuts blended with olive oil.
Take chicken breast pieces and dab on salt and black pepper on them and place them in the grill pan.
Please note, that there is not a drop of oil being used here and the excess fat of the chicken drips off as the chicken is being grilled.
As the chicken is being grilled, we can prepare the Almond Pesto sauce.
Use Prestige Hand Blender to make the sauce.
Put in a bunch of coriander into the blender jar with Basil leaves, add Almonds, finely chopped Jalapenos, some salt, and black pepper powder. Check on the chicken in the grill pan and flip it over and ensure it is cooked evenly on both the sides.
Add cloves of garlic to the grill pan to add flavor to it.
To the blender jar, add yogurt and go ahead and blend them up beautifully.
To this fine paste add lemon zest and lemon juice and blend it again. Pour out the fine sauce into a glass bowl.
Check the chicken again and poke some holes into them so that it cooks a crispy layer on the outside and remains succulent and juicy inside.
Gently apply a little pressure on the chicken to cook them to a nice brown color.
Now the chicken can be served with the Almond Pesto sauce.
