Italian Tiramisu Fruit Exotiques Ingredients Egg yolks 2 Sugar 1/4 cup Whipping cream 3/4 cup Vanilla extract 1tsp Mascarpone/ Cream cheese 1/2 cup Vicenzovo lady finger biscuits 200gm Fresh Chopped fruits 1 cup each,ie (mango,papaya,kiwi) Canned crushed pineapple – 1 cup (Drained) Mango juice 1 cup to dip the lady finger biscuits Fresh passion fruit pulp (with seeds) for topping, from about 2-4 passion fruits Sugar 1 tbspn Brown sugar 3 tbspn Method Cook the chopped mango, papaya, canned pineapple & passion fruit in a pan with brown sugar & sugar for 10 mins till soft & tender. Remove from heat & add the chopped kiwis. Keep aside to cool. Combine egg yolks & sugar in a double boiler & cook whisking continuously till the mixture is pale & thin. Beat the mixture till fluffy, add mascarpone or cream cheese & blend it till combined. Whip the whipping cream with vanilla extract till stiff peaks & add it to the cream mixture & mix it well. To Assemble Dip the lady fingers in the mango juice & layer it in a serving dish. Cover the biscuits with the mascarpone mixture cream. Layer with fruit cocktail. Repeat the process again for the 2nd layer. Chill the tiramisu atleast for 2-3 hrs. Spoon the fresh passion fruit pulp over the tiramisu right before serving.
