Kesar Badam Malai Kulfi is a delicious ice-cream. It uses milk, milk powder, malai/homemade cream. As the name suggests this kulfi is flavoured with saffron, dry fruits and cardamom. It is a mouthwatering treat for everyone. This kulfi is a very famous dessert from Rajasthani cuisine. You can serve this kulfi as a party dessert either for any festival celebration like Diwali. So, try to make this delicious kulfi at home and enjoy with your family and friends.
Take Prestige Automatic Milk Boiler, add milk. Switch it on and let it boil.
Take a bowl, add milk powder, cornflour and 3 to 4 tablespoons of milk to make a thick paste. Mix well so that it becomes smooth in texture.
Add this mixture to milk. Stir it occasionaly and boil.
Once boiled, switch off the Prestige Automatic Milk Boiler. Pour the milk in broad vessel. Let it cool completely.
Now, take a grinder jar. Add milk mixture, homemade malai or fresh cream, crushed sugar, half of the chopped dry fruits, tooty frooty, soaked saffron. Churn this mixture in pulse mode for 5 to 6 times. (do not grind it)
Then add cardamom powder. Mix well.
Pour this mixture in ice-cream mould or box. Garnish it with chopped dry fruits and some saffron strands.
Cover it with a cling wrap and keep the mould in the freezer for 8-10 hours. (You can make it in a kulfi maker)
