Blanche a bunch of washed and cut spinach for 3-5 minutes after sprinkling the baking soda to help retain the color. Once done, remove and allow to cool and blend with a hand blender.
In another pan, heat oil. Add 1 teaspoon of cumin seeds, onions, garlic and red chilies and saute until golden brown. Add the spinach and rest of the dry masalas.
Cut the paneer into cubes. Place in the air fryer until crispy. Once done, add this to the spinach mixture.
Mix in the cream to this and allow to cook for a minute or two. Serve.
Note:
a. Add a teaspoon of baking soda before adding the spinach, this well help the spinach to retain its color
b. Spinach is very low in calories and has a good amount of dietary fiber
c. High in vitamins A, C and zinc
d. This same spinach sauce can be used for making chicken, potatoes, and corn
